Pancakes, pancakes … I could have a blog just about pancakes. I promise that over time, there will be more than a few pancake recipes. I really like pancakes.
It is very important for food to be tasty. Eating for me is one of the important pleasures in life. When creating recipes, I always research what herbs and spices are compatible with what foods. For example, in this recipe I matched apple with cinnamon which, in my opinion, go very well together.
Although I love pancakes, I don’t ignore the effect of flour in dishes on body composition. I replaced plain white flour with wholegrain spelt flour, which is easier to digest. Spelt is higher in protein and more nutritionally beneficial which is not the case with wheat flour.
- 1 coarsely grated apple
- 1 egg
- 2 tablespoons of natural yogurt
- 2 tablespoons of wholegrain spelt flour
- 1 tablespoon of coconut flour
- 1 teaspoon of cinnamon
- 1 teaspoon of baking powder
- a pinch of salt
- 2 tablespoons of coconut oil
Mix the egg, yoghurt and grated apple together. Then add all the remaining ingredients into the mixture.
Heat the coconut oil in a frying pan and cook pancakes over a medium heat for several minutes on each side, until golden brown.
Serve with honey, fresh berries and chopped toasted hazelnuts.
